Devonald Carbonara

So, you have a hungry mob to feed on games night, what do you do?
We have the answer, easy to make games night meals for everyone . .

This is not a very authentic Carbonara, sorry Italy, but it is very tasty.

Devonald Carbonara – Serves 4

Ingredients

• Pasta (the rule is a handful for each person and one extra for luck)

• Bacon, chopped

• 2 Garlic Cloves, squished

• 1 Onion, chopped

• 200g Frozen Peas

• 2 Tomatoes, chopped

• 1 Red Pepper, chopped

• Herby Cream Cheese

• 300g Creme Fraiche (or natural/plain yoghurt)

• Pepper to Taste

Method

Cooking Pasta

  1. Cook pasta as needed, drain, then set aside.

Mmmm, Bacon

2. Chop bacon into a large saucepan and fry on a high-ish heat.

(we often just snip the bacon into pieces with kitchen scissors straight into the pan – easy peasy)

Add some 'squished' garlic

3. Turn down heat a little and add the garlic.

Cooking bacon and onions

4. Add onions and cook until they go pale.

Creme Fraiche

5. Stir in the Creme Fraiche – plain yoghurt will also work if needed.

Tammy loves peas

6. Add the frozen peas, cooking until they deepen in colour.

Herby Cream Cheese

7. Stir in the herby cream cheese.

We use Philadelphia, but you could use plain and add the herbs you like. Boursin works well too, but we find it expensive.

Pop pasta back in

8. Add the pasta back to the pan and coat well with the sauce.

Give it some pepper for a bit of welly

9. Add some ground black pepper to taste – Tammy likes it with a bit of a kick.

Now add some red pepper for a bit of crunch

10. Add the chopped pepper at the end and just warm through, this leaves it nice and crunchy.

Tip – This meal is great with some garlic bread on the side.
